Lemon puree is freshly squeezed juice that has undergone shock freezing. The puree is made from Sicilian lemons on Spanish industrial equipment from Zumex. The technology eliminates the penetration of essential oils from the peel and albedo, which allows lemon puree to be stored much longer than juice squeezed in a restaurant. The volumes produced by the company allow eliminating strong changes in acidity associated with different degrees of ripeness of the fruit.
Lemon is widely used in cooking, making cocktails and, of course, lemonades.
